Nutrition Wednesday - Chicken Salad!

I enjoy chicken salad!  Well, while we have been doing a 3 week "clean eating" I came across a recipe that is an easy, and tasty, swap!

Boil 3 chicken breasts and shred
Smash one avocado and mix with 1/2 cup of Greek plain yogurt
Finely chop 1/4 of an onion

Mix all together and chill for 2 hours. 

Delish!

I ate mine with whole grain cracker-like biscuits.  I can't remember the name and I threw the package away to place them in a air tight container (a month later, still fresh!).  But they are delicious!  I have also eaten the chicken salad on a whole grain tortilla with tomato and cucumber.

Easy swap and so good!  I won't make chicken salad with mayo ever again!
